He argues that the “Calories In, Calories Out” model is a dangerously oversimplified and ineffective framework for understanding weight gain. Instead, Fung repositions obesity as “a multifactorial disease” (20) rooted in hormonal dysregulation. The book’s central thesis is that weight is not determined by conscious calorie accounting but by an automatic, hormone-driven homeostatic system he terms the “body fat thermostat” (25). According to this model, fat accumulation is a consequence of hormonal signals—primarily from insulin—that instruct the body to store energy, rather than a failure of individual willpower.
Fung deconstructs the calorie-centric paradigm, stating, “If you focus only on the calories and ignore the hormones, you’ll never solve the fat storage problem” (17). The author illustrates how the body responds to the informational content of food through the analogy of a lumber warehouse manager. He argues that the total amount of lumber (calories) entering a warehouse is less important to the effectiveness of the business than the manager’s instructions on whether to store or sell it. In the body, hormones like insulin are the managers. Consequently, two foods with identical calories, such as 200 calories of cookies versus 200 calories of eggs, elicit vastly different hormonal responses. The cookies trigger a large insulin spike, instructing the body to store energy as fat, while the eggs do not. While insulin is the primary regulator, Fung emphasizes that the body fat thermostat is influenced by a complex network of interacting hormones. He details the roles of numerous other chemical messengers to illustrate the multifactorial nature of weight regulation. For instance, Leptin, a hormone released by fat cells, signals to the brain that fat stores are sufficient, thereby reducing hunger. Ghrelin, the “hunger hormone,” rises before meals as a conditioned response. Satiety hormones like GLP-1 and peptide YY are released in response to certain nutrients, signaling fullness and instructing the brain to stop eating. By illustrating this complex system, Fung argues that obesity is not a single-factor disease. Effective treatment, therefore, must focus on correcting these underlying hormonal imbalances—through dietary choices, meal timing, and other lifestyle changes—rather than on the futile and superficial counting of calories.
Beyond its physiological arguments, The Hunger Code presents a damning critique of the modern food industry, arguing that ultra-processed foods (UPFs) are not merely unhealthy but are often deliberately engineered to be addictive. Fung contends that the addictive nature of these products is a primary driver of the obesity epidemic. This is not a matter of consumers lacking self-control; rather, it is the result of food corporations systematically designing products that bypass the body’s natural satiety mechanisms and hijack the brain’s reward pathways. This process, Fung argues, creates a cycle of craving and overconsumption that mirrors the mechanisms of drug and alcohol dependency.
Fung explains that UPFs achieve their addictive potential by delivering a “supernormal stimulus” to the brain. Natural foods have inherent limits on their palatability, but UPFs are formulated with combinations of sugar, fat, salt, and chemical additives to hit a scientifically determined “bliss point” that maximizes pleasure. This intense sensory experience is an exaggerated version of the reward the brain would get from natural food, making it far more compelling. Compounding this is the speed of delivery. UPFs are stripped of fiber and protein, and their food matrix is broken down to ensure rapid digestion and absorption. This creates a quick, intense “neurotransmitter spike” of dopamine, the brain’s primary feel-good chemical. This rapid high-and-crash cycle is a hallmark of addictive substances, from cocaine to nicotine, and Fung argues that UPFs exploit the very same neural circuitry. He also points out that “UPFs are cheaper, more easily accessible, […] and more socially acceptable than any other addictive substance by a wide, wide margin” (125). This “ubiquity” makes them all the more harmful. Furthermore, their affordability creates a direct correlation between poverty and obesity.
To strengthen its framing of UPFs as addictive, the book draws a direct parallel between the tactics of the ultra-processed food industry and those of Big Tobacco. Fung notes that in the 1980s, major tobacco companies like Philip Morris and R.J. Reynolds acquired food giants such as Kraft, General Foods, and Nabisco. They then applied their well-honed “playbook” for selling an addiction to the food market. This included marketing heavily to children, using cartoon mascots to build lifelong brand loyalty, and engaging in “scientific capture” by funding research designed to downplay the harms of their products and shift blame onto consumers. Fung argues that, just as the tobacco industry knew nicotine was addictive, the food industry understands that products engineered for hyper-palatability drive compulsive consumption and, consequently, greater profits. Fung asserts that “The unfortunate (for you) side effect is that you’ll get fat. The food company doesn’t care. They can always blame you for low willpower. They can always fall back on the Calories In, Calories Out argument” (108). In this way, he implies a complicity between unhelpful government advice on weight management and the industry that manufactures ultra-processed foods.
The book distinguishes clearly between natural foods that “would be recognizable to your great-grandmother” (116) and their ultra-processed counterparts, which are industrial formulations made from cheap substances and chemicals that cannot be found in a home kitchen. These are what food writer Michael Pollan calls “edible food-like substances” (116). A key physical characteristic contributing to their addictive quality is “vanishing caloric density” (106), a phenomenon where foods like cheese puffs or potato chips dissolve so quickly in the mouth that the brain barely registers their consumption, encouraging mindless overeating. By identifying the specific mechanisms of addiction and the corporate strategies behind them, Fung reframes the consumption of UPFs as a meticulously engineered biological trap rather than a conscious dietary choice.
While The Hunger Code details the internal, physiological drivers of weight gain, it places equal, if not greater, emphasis on external factors. Fung argues that the modern obesity epidemic is not the result of a sudden, collective failure of individual willpower but rather the consequence of living in an “obesogenic environment.” This environment, shaped by societal norms, commercial interests, and social networks, conditions people to eat habitually and mindlessly. The book’s analysis of “conditioned hunger” reframes obesity as a systemic problem. Fung asserts that “[m]aintaining a healthy weight in an external environment that promotes excessive weight gain […] is like trying to stay afloat in a tsunami” (156). The statement, while hyperbolic, emphasizes how default choices and cues in our daily lives make weight gain almost inevitable.
Fung uses the classic psychological principle of Pavlovian conditioning to explain how our environment trains us to be hungry. Just as Pavlov’s dogs learned to salivate at the ring of a bell, humans have been conditioned to feel hunger in response to external cues, independent of any real biological need. These cues are ubiquitous in modern life: The time on the clock dictates “lunchtime,” the smell from a mall food court triggers cravings, and television commercials for fast food create an immediate desire to eat. Fung explains that these cues can provoke a real physiological response, including the release of the hunger hormone ghrelin, making the urge to eat feel like a biological imperative. This conditioned hunger is a learned behavior, not an innate drive, and it explains why eating has become a constant, automatic habit.
The book illustrates the dominance of environment over individual choice by examining immigrants’ health outcomes. Fung cites studies showing that immigrants to the United States are typically thin upon arrival, but their obesity rates climb steadily the longer they live in the country, eventually matching those of the native-born population. Since their genetics remain unchanged, the only variable is their environment. This shift reveals how deeply the American food landscape—characterized by large portion sizes, the ubiquity of cheap UPFs, and a culture of constant snacking—reshapes eating behaviors. Consequently, Fung states that “If you live in America today […] Your weight gain is not your fault, because it is the product of the environment in which you live” (214). Fung contrasts this cultural landscape with the structured eating environment of the 1970s, when people typically ate three meals a day with no snacks, allowing a natural daily fasting period that kept insulin levels in check.
This environmental influence also operates within our most intimate social circles. Fung introduces the concept of “social modeling,” where individuals unconsciously adopt the eating habits of their family and friends. He highlights research showing that a person’s risk of becoming obese increases by 171 percent if their best friend becomes obese. These habits—what to eat, how much to eat, and when to eat—spread through social networks. Individuals unconsciously assimilate what is perceived as normal and acceptable within their peer group.
